Crepes for breakfast. Here is an easy recipe for 1 person
1 large egg
pinch of salt
1/2 cup flour
1/2 cup + 2 Tbsp milk
1 teaspoon vanilla extract
1 tablespoon sugar
1 tablespoon oil
In a bowl whisk egg with salt. Add flour, half of the milk and all the other ingredients. Whisk the batter and add the remaining milk. Make sure no lumps in the batter. Allow to sit for 1 hour. Heat a nonstick frying pan on medium heat, add a bit of oil. Spoon 3 tablespoons of batter and swirl pan to coat bottom. Cook until the top appears dry, flip and cook another 30 seconds. Transfer to plate, cover to keep warm.
Serve with a dusting of powder sugar, Nutella, bananas and whipped cream, or scrambled eggs, bacon and ham. You can also make crepe Suzette - fold crepes in quarter. Heat 2 tablespoons butter and 2-3 tablespoons orange marmalade in sauce pan. Add crepes and move around to coat, turn crepes and repeat. Transfer to serving plate.
